Spring Greens and Pecorino Salad
Updated: Sep 16, 2019
A healthy and refreshing way to make a twist on this popular lush green salad.

Hi professional ladies! I'm sure you've noticed that there's nothing I love more than a good salad...bonus points if it takes me not a lot of time and effort to make (because I know we're both busy). Like literally it took me about 15 minutes.
This healthy option can be made as a main, adding protein to the salad, or as a side to a meal. It can also be mass made in bulk and stored for 1-2 days for an easy and ready to go healthy bulk meal prep!
Using butter lettuce and a spring/arugula greens mix, set your base and add your toppings for the most delicious
Spring Green and Pecorino Salad
2 cups spring mix
1/2 cup butter lettuce
1/2 cup Shar gluten free bread crumbs
3 oz sliced Pecorino
2 tbsp diced almonds
1 serving asparagus
Dressing
2 tbsp California Olive Ranch EV Olive Oil
1 tbsp red wine vinegar
1 tbsp stone ground mustard
1 pinch salad
1 pinch pepper
Mix dressing ingredients in separate bowl. After you assemble the salad base, mix in dressing and toss to combine.
Viola.
