Bring in fall with this pumpkin-y spin on the classic morning oatmeal recipe!
Along with the coming of fall, comes everything #pumpkin flavored. Pretty much anything you can add pumpkin to, people are. Even pushing the limits! But this classic recipe with a simple seasonal spin, puts nothing but the taste of autumn in your mouth! The secret to the 'extra fluffy' design, is in the egg whites! See below for the full deets :)
1/2 cup old fashioned gluten free rolled oats
1/2 cup almond milk
1/2 cup water
1/4 cup pumpkin puree (optional)
2 egg whites
1 tbsp vanilla
1 tsp salt
1/4 cup paleo pumpkin granola
1 additional tsp pumpkin spice for topping
1 tsp cinnamon for topping
How to make it:
Add the puree (if you choose it), oats, water, vanilla, almond milk, half the banana, salt, and pumpkin spice to a pot and bring to a boil.
Once boiling, reduce to low simmer and add the egg whites. CONTINUE STIRRING until all whites are absorbed (about 2-3 minutes). The continuous stirring makes sure that the whites are absorbed and not hardened.
When all of the liquid is soaked up, the oats are done. Pour in a bowl and serve with the other half of banana, granola, other tsp of pumpkin spice and maybe some extra cinnamon...and enjoy!
