Low in calories, high in healthy fats, proteins and vitamins and minerals...there's not much healthier than a good white fish. Especially like this!
It's the summer and while your 'unhealthy' counterparts are out grilling steaks on the grill...you're inside baking white fish. Because we all have goals right!? More bonus points that you can make this in like..20 mins or less. And in bulk to have for healthy meal prep. What else could you want!? This dish is paleo, pescatarian, keto, and gluten free approved.
Easy Healthy Mediterranean White Fish with Sautéed Squash
It's pretty much the easiest, bikini bod prep, summer fish meal prep you could possibly do. So let's get right to it.
2 tbsp California Olive EV Olive Oil
1/2 lemon, juiced
1/2 lime, juiced
2 tsp minced garlic
1 pinch oregano
1 pinch basil
1/2-1 pound white fish (cod, tilapia, dover sole, etc)
Spring of oregano
Preheat oven to 425 degrees
Heat all ingredients, minus the fish, in a skillet over medium heat
Soak fish in skillet marinade
Transfer to baking sheet and cover fish with remaining skillet marinade
Bake for 4-7 mins until golden brown
For the side, sauté your choice of zucchini, eggplant, and yellow squash in the same fish marinade.
